How the fault gets found
An oven that cannot reach temperature and an oven that lies about temperature are two different faults. The first is usually an element, an igniter or a safety cut-out. The second is calibration, a tired sensor, or a door that no longer seals — and it is the one that gets blamed on the recipe.
Self-clean is the other reliable trigger. The cycle takes the cavity far past baking heat, and a thermal cut-out or a control relay that was already marginal tends to let go right at the end of it. That is the cut-out doing its job, not bad luck.
